Best Breads & Muffins Recipes
Bread is the most rewarding thing you can bake at home, and muffins are the easiest entry point into baking. This collection covers yeast breads, quick breads, rolls, and muffins, with recipes that explain the fermentation timeline, the shaping technique, and the bake cues that tell you when a loaf is done. If you're new to bread, start with the no-knead or bread-machine recipes before moving to sourdough.

Frequently asked questions
Why is my bread dense?
The most common causes are under-proofing (the dough hasn't risen enough), over-proofing (it rose and then collapsed), or too little steam in the oven.
Do I need a bread machine?
No. Every recipe in this category can be made by hand or in a stand mixer. Bread-machine recipes are labeled, but the same dough can be mixed and kneaded traditionally.
Why are my muffins dry?
Overmixing is the most common cause — stir just until the flour disappears. Overbaking is the second; pull the muffins when a toothpick comes out with a few moist crumbs.
